Pecorino Scodellato with Vegetable Rennet

It is a young and fresh pecorino cheese with a particular “bowl” shape which ois obtained by using a special mould during the production; this peculiar form is commonly known as “scodellata”. The thin and soft crust has a straw yellow colour, which is determined by the natural ripening, while the white paste has a semi-soft consistency with small and regular holes.
