Pecorino del Busti

A classic fresh, short-maturation pecorino, characterised by a bright red rind due to the treatment with tomato paste. Originally, tomato was used to counteract the formation of mould, thanks to its natural acidity. Even today, this treatment is still applied by hand before sale. The paste is smooth and elastic, white in colour and tending to straw yellow as its maturation progresses. The flavour is sweet, with a typically milky aroma.
