The sheep’s milk used in production comes exclusively from Pienza and the adjacent Val d’Orcia municipalities as Castiglione d’Orcia, Montalcino, Pienza, Radicofani, San Quirico d’Orcia. This straight heel Pecorino has a smooth, compact paste, and is almost free of eyes. Its taste is balanced and pleasant on the palate. It undergoes a medium-long maturation, with an optimum that ranges from 90 to 180 days. On the surface, the product is treated with olive oil grounds that give it its typical brown colour.
