Pecorino Toscano PDO a Pasta Tenera
This pecorino cheese is produced with pastourized milk from farmers-members of the Consortium of Tuscan PDO Pecorino Cheese. It is characterized by a short ripening time of at least 20 days, at the end of which the cheese wheels are washed and the rind is treated with tomato paste.
